So...I've been watching my share of cooking shows lately, and the last couple of shows I've watched, showed various different cooks dumping various different Italian herbs into their Italian dishes. As I sat and watched, I couldn't help but wonder what each herb tastes like, what its contribution was to the dish, and why the chef chose that particular combination?
Today I made my favorite homemade marinara sauce, and as I added the basil, I couldn't help but be reminded of the various Italian herbs I'd seen the other cooks use. It was at that moment, I decided that those other herbs don't matter; I love basil! It is the herb for me! Basil is a warm, heady, sensuous herb, with just the right touch of Italian flavor, and it pairs great with tomatoes and fresh tomato sauce. It's even great in gelato! Lemon basil is great too; It's good for chicken and seafood, and it smells great! I use basil as my sole herb in all my Italian recipes, even if the recipe calls for other herbs. So, now that I've come to the conclusion that basil is my favorite Italian herb (followed by rosemary, and then parsley), I was wondering, what's your favorite Italian herb/s/, and why?
